Table 3. Representative studies of electronic nose applications in tomatoes

81Abstract: Existing studies primarily focus on field detection of gray mold caused by Botrytis cinerea at the leaf scale in tomatoes (Solanum lycopersicum) or employ a single sensing modality, lacking a systematic review that centers on postharvest fruit integrating multiple sensing modalities and linking them to pathological mechanisms. Multimodal sensing technology can capture subtle changes in early-stage disease from multidimensional signals and is an important means for early warning. Using keywords including “postharvest tomato gray mold”, “spectral imaging”, “machine vision”, “electronic nose” and “multimodal fusion” as combinations, this review summarizes research progress in pathological mechanisms, spectroscopy, machine vision, electronic noses, and multimodal fusion in the past 10 years. Mature-induced susceptibility, cell wall degradation, and changes in volatile organic compounds provide the biological basis for early detection. Spectroscopy characterizes internal tissues and biochemical changes. Machine vision supports surface screening, and electronic noses detect odor changes. The multimodal fusion benefits in tomato maturity assessment provide a methodological reference for gray mold detection. Future research should establish a real-time data set covering different fruit types, varieties, maturity stages, and storage conditions, develop interpretable fusion models and verify cross-device generalization ability, and promote portable sensing equipment and online early-warning applications.
